Low Carb High Fat Quiche

Ingredients Serves 4

  • 8 eggs

  • 225 ml heavy whipping cream

  • 225 g fresh spinach

  • 150 g diced bacon or chorizo

  • 150 g shredded cheese

  • 2 tablespoons butter, for frying

  • salt and pepper


  1. Preheat the oven to 350°F (175°C).

  2. Fry the bacon in butter until crispy. Add the spinach.

  3. Whisk the eggs and cream together and pour into a greased baking dish.

  4. Add the bacon, spinach and cheese on top and place in the middle of the oven. Bake for 25–30 minutes.

4 Grams of Carbs per serve.

I didn't put quite so much spinach in mine, and added mushrooms. It's fast and easy to make and tastes yum!! Great the next day for lunch too. Here's how mine turned out.
